Cordillera Organic Farm and Garden

Mission Statement: Organic vegetables for everyone.

Area: 1.5 acres of vegetable and herb garden plus numerous banana, citrus, papaya, and other fruit trees.

Goal: Continue expanding our organic garden with the aim of protecting the genetic biodiversity of a myriad of foodstuffs in Costa Rica, while serving the best possible organic food from our restaurant to our guests and staff.

Head Gardener: Fidel Elisondo has been gardening for 15 years, and is very committed to organic gardening due in no small part to his love of commercial gardening and his experience in the late 80’s when he suffered acute, agro chemical poisoning, resulting in a long hospital stay and his permanent sterilization. Today he is the proud adoptive father of three boys and is deeply committed to the return of his forefathers’ organic gardening techniques; including the propagation and conservation of heirloom vegetables, the concept of seed banking, and educating tomorrow’s organic farmers.
